This recipe is so quick & easy and they're almost too cute to eat!
Additions:
1 egg
105g unsalted butter
Recipe:
Step 1: Melt 105g unsalted butter and let cool for 5 minutes and set aside.
Step 2: Pour the cookie mix into a medium bowl and add the melted butter and stir until just combined
Step 3: Add one egg and mix until stir until just combined (dont overmix)
Step 4: Place 2-3 tablespoon cookie dough balls on a lined cookie sheet, 3-4 inches apart. Add ½ tsp balls for each ear. The cookie should resemble a teddy bear shape.
Step 5: Chill the dough for at least one hour in the fridge
Step 6: Preheat the oven to 170 degrees fan
Step 7: Bake at 170°C for 10 minutes, or until edges are set. Let them cool & enjoy!
Allergens & Ingredients: Cookie mix: Flour (Gluten), Baking soda, Baking powder, Light brown sugar and granulated sugar
Can you make them vegan?
Instead of regular butter, you can swap in high quality vegan butter made for baking. Make sure to use a good brand—some brands are very high in water content and melt at lower temperatures, yielding very flat cookies. You can also omit the egg. First, follow the recipe and slowly mix the dry ingredients in. If the dough seems too crumbly, add a tablespoon of alternative milk at a time (2-4 tbsp total), until the dough comes together. The finished dough should be thick, but scoopable.
